Maman-joon’s Kookoo Sabzi

Take parsley, coriander, garlic chives, mint, and fenugreek. Parsley is almost always the largest of the lot. And Fenugreek the smallest.

Next wash all the leaves, or ‘sabzeh’ and throughly dry them before chopping them evenly.

Crack open a few eggs in a separate bowl, add some minced onions and whisk with a dash of salt and pepper.

Add the chopped sabzeh along with some zereshk (barberries) and chopped walnuts. Fold everything in evenly.

Pour the mix into a lined baking tray with some parchment paper smeared with butter and bake in a preheated oven at 160*C for about 10 to 12 minutes.

Remove the Kookoo from the oven and chop into a square and finally serve with some barberries and walnuts on top for added flavour and enjoy with loved ones.
